Where's the icing?
Do you remember this time last week? All you could think of was SUGAR!! And how the heck are you going to get through TWO WEEKS of this?!!
Hopefully by now most of the sugar dementia has left your system and you're less likely to break out in a cold sweat and run in the opposite direction if someone unknowingly offers you a cookie. Keep up the great work!!! Only three more days to go Sweet Cheekers. And in the meantime, I thought it was time for another recipe. Serve yourself up a fat slice of these cakes!
Salmon Cakes
• 2 eggs
• 1 1/2 cups almond meal
• 1/2 pound cooked salmon, thinly sliced
• 2 large zucchini, roughly grated
• 1 tablespoon chopped dill, 1 teaspoon thyme, 1/2 teaspoon cayenne pepper
• Olive oil
Combine eggs and almond meal in a bowl and whisk until smooth. Stir in salmon, zucchini, dill, thyme and cayenne pepper. Place a generous amount of olive oil in a frying pan and heat over medium heat. Spoon about 2 tablespoons of the salmon mixture into your hands and form into a ball. Place in the skillet and gently press the ball to slightly flatten it. Cook for 1-2 minutes each side or until golden underneath and cooked through. Remove and repeat with remaining salmon mixture.
These cakes can be a little tricky to flip without having them fall apart. The secret is to use ample amounts of oil in the skillet so that the cakes don't stick. Be sure to add more oil to the skillet between each batch!
Those salmon cakes look great, looking forward to trying that recipe.
Sadly, I didn’t make it through the weekend. The funny part is, I’m not a sweet-tooth. I don’t usually have sugar at all. But I completely forgot about the challenge, and at a birthday party for a local 2-yr-old, I came in from a hard session of sand-sledding on the berms, and ate a big piece of chocolate cake. I didn’t even think about it until the next day I suddenly remembered. Ohh! The Shame!!
I will make up for it somehow.

Ok Sweet Cheeks, I must confess. I have not been sugar free for the past week and a half. I had, without even thinking about it, a few birthday drinks this past weekend… And guess what… They were laced with sugary sweetness! It didn’t even cross my mind that I was drinking sugar. I also had a paleo treat last week that contained agave nectar, and some honey in my sweet potatoes too. I also had some raisins that I’m sure were probably sweetened too… And yes, I have eaten ketchup and chewed gum. :(
I am an addict. I want some bacon!

And just so you know, the sugary raisins were a quick fix to and end of the day low blood sugar grumpiness.

I was wondering if I could substitute something else for the salmon? I do not like salmon, I do not like it with green eggs and ham, I do not like it Sam I am, I do not like it here or there, I do not like it anywhere. Thanks for any suggestions

Although these items are technically sugar free, after day 6 I stopped eating almonds, peanut butter (the TJ brand with no sugar added) sugarless gum and diet soda. Let’s face it no diet allows for 3-4 tblsps of pb, coke zero, a jumbo pack of Trident and a 1/4 BAG of almonds a day. So I just cut it ALL out; I’m not much of a “moderation” person.
But on the 9th day ... I broke down and had one of those Zone chocolate graham bars. It did not taste good. It did not satisfy my craving. Gross. Why did I do it?? Oh, I am in a shame spiral!! If the weather allows us to row in the morning ... I’ll do that and then go to CF later in the day. Two wod’s in one day is VERY challenging for me. I’ll burn calories just worrying about it.
At least there’s been no wine (or any alcohol), no other sugar and no gluten since day 1. Only 4 more days and a wake up. We’re almost done!!

Hi everybody! Thank you for your great updates.
I’d like to say that I think you are all doing a FANTASTIC job with the no sugar challenge! If you have a slip up here or there, don’t stress about it, you don’t need to punish yourself or make it up in any way, really! The goal of the no sugar challenge was to get us all out of the habit of scarfing down sugar without thinking twice about it. Bring our awareness back to the sweets we indulge in. I think you are all accomplishing this in one way or another. We only have a few more days of the challenge, but I hope that you all continue with this hightened awareness of what you’re fueling yourself with!
And as for me…still sugar free!! But I am looking forward to something big and chocolately this weekend! : )
And Kim…you could sub any other fish or the recipe would also most likely taste delicious with ground turkey meat.
