It's one thing to commit to eating high quality, organic food... quite another to figure out how to do it without breaking your bank account. One of the ways to reduce the cost of grass-fed beef, is to order a piece of a cow - a quarter, half or whole - the problem then is what to do with all that meat! Knowing that this is a common problem for all of us, we started looking for solutions.
It just so happens that one of our former clients, Ralphie, is old friends with the president of Estancia Beef - and he made it his mission to help us figure out how to create a program that supported our community with high quality, grass fed beef, at a cost significantly less than what you pay at the market.
To accomplish this, we decided to try ordering in much larger hunks of beef (called primals). These are 7-9 pound pieces of rib-eye or New York steak that once you get home, you cut into steak size and freeze for use later. At first we weren't sure that people would be interested in butchering their own meat at home. What we found is that the process is so quick and easy, our members were absolutely, overwhelmingly interested!
We've been running the program now for about 4 months with GREAT success. We're happy to announce that we've partnered with Estancia to help make this program available to CrossFit Affiliates everywhere.
